No cook, quick and easy meal (or meal prep) idea. This was inspired by @cozycravings white bean salad, I wanted to make hers, but I was lacking a lot of the ingredients and had others on hand so just made a few swaps here and there.
can of white beans
part of a red onion
some radish
few cloves of garlic
salt/pepper
vegan feta (regular would be good too!)
dash of olive oil
dash of white wine vinegar
Mix it all together with portions to your liking! I topped it all on some avo toast and it was soooo good! This could honestly be a breakfast, lunch or dinner add on.
